on how much rice to cook....
my experience says to figure they'll eat about 1/2 cup per person, but if its easy, making more
cant hurt. (to a point ;)). rice is cheap, easy to make and is easy to package up as leftovers in
ziplock bags and send home with people.
personally I aim to have about 20% over what I need. that means everyone got everything they
wanted :) and leftovers sent home with happy diners is always a welcome thing :).
more than 20%, though, and I start keeping track for next time ("ok, the fig sauce was tasty but
didnt get eaten in volume. apparently a little goes a long way check."). and if I have leftovers
AND no one takes the baggies of it home, I know it wasnt a hit.
for the record, we rarely throw food out :)
--AM, who is going to have to remember the "rice cooked in a roaster" trick... I dont care for the
texture of boiled rice and steamed rice in quantity is asking for trouble...
