Hamantaschen?
cookie dough rolled flat to about 1/8th inch and cut circles out. Various
fillings with poppyseed the most common. three sides brought up and pinched
together around the filling.

No, not a cuskeynole. I'm afraid that there are probably quite a
number of cookies and variations which match the description you've
given so far. My guess might be mamouls.
