Easy enough... professional lottery winner.

Seriously?  Depends- like most things- on how much time you want to invest.
I don't recommend soldiering- inflexible time schedule.  I'm sure folks are
going to advocate a field in the museum industry... I don't recommend that
either as the money is terrible.

Things that people I know in the SCA do that allow them the things you ask:
Chiropractor(I know two... six years of school, good pay, no 'on-call' time,
and steady work), Anything in Movies(I know several of these guys- GREAT
money but not all the time, work comes in fits and starts, time off is in
*months*), and several private businessmen... gotta watch that last one
though; you get what you give there.
