Other people in the kitchen and in the cleanup crew, who then write to
the crown and/or baron/ess (if any)?  Anyone can write, and I believe
the landed folks are extremely happy to get any feedback at all.

I'm hardly one to preach, mind you -- I've only written one
recommendation in my life, and that recent.  I'll still venture to
advocate it.
