Note for Anne and others: having grown up with parsnips as a
seasonal yet regular component of the foods I was offered, I was
most pleasantly surprised by just how good this presentation was.

The parsnips of my childhood typically had a rather overwhelming
taste. I suspect that blending them with the carrots, and perhaps
some other aspects of preparation, increased their palatability
immensely.

Gunthar, how many times were the parsnips boiled and the water
drained before they were chopped up for the pie/tart?
