Besides the examples you've given, there is something else some people
don't realize. Those people playing Mozart, etc, are just reproducing
something that has been done for many years. They are not creating
anything new.

Does this make them Craftsmen or Artists?

My opinion depends on the quality of the reproduction of the performance
or the life breathed into the performance. Craftsmen can do the steps to
reproduce the piece, but artists give it life and depth.
