Actually, all of those Chivalry mentioned have taken their role of service
to heart many times in the past.  I personally have seen most of them as
servers, kitchen help, cleanup and many other activities that show "it is
noble to serve" (subject of an article by my Lady).  This is just a
continuation of what they have always done, made more remarkable by how many
were there at once (that's a lot of Chivalry for most events just in the
attendance) and the service not provided by others who should know better.
Nobility is not always found in the rank, but always in the heart.
