I know that every fall, in Germany, many places have a "neuerwein"
fest, in which they drink the new wine, still fermenting.  And since
the yeast is still active when they ladle it out of the huge Wine
Tuns, it is bubbly.  Really good, too.  They traditionally serve it
with zweibelkuchen, an onion cake that is reminiscent of a quiche
because of the eggs and cream.  Maybe that is the only form of bubbly
drink that was available, but it was there, and they used it in some
parts for their harvest festival.
