There are some descriptions and I believe some directions for making
some period glues in this file in the CRAFTS section of my Stefan's
Florilegium:

glues-msg         (23K)  5/ 8/96    Medieval glues.

In addition to the hide and horn glues that Gunnora mentions, they
also used milk for some glues, which is still used in some glues
today. However, I don't think the milk glues are/were waterproof.
As she mentioned, there are modern hide glues available today.
