I assume there is protocol for this, but I don't know what the proper
thing is. I typically either pick the one that is most promonant for
the individual in question.

Well, I don't know about the rest of the folks, but I try for what sounds
right, since I'm not sure about honorific protocols, either.
For the above, I'd go with:
1. "His Excellency, Master......"
2. Stick with "Sir".
3. Don......., Master of the Sable Star.
The "etc." aren't on my list.
