Beef comes from cows. (i can't believe I had to say that in texas)
Cows are very medieval-even prehistorical.
Steak, is a TYPE OF CUT of beef!!! Want a more medieval term? Slab,
plank, slice. Also slab refers to cooking a whole half of a cow.
It's also true that cows were generally only butchered and eaten by the
very wealthy.
  You can butcher a cow alot of different ways-it all depends on what
you want to use the meat for in quanity-many steaks or slabs for eating
at a small feast or one huge haunch or side seared/roasted to feed a
whole hall.
Roast, haunch, slab, meatball (yes, hamburger
folks-ground/minced/chooped up meat), joints, chops, all of these are
terms in medieval cooking for cuts of beef.

Second: grilling and roasting meats over open flames and embers were
exceptionally popular...please read about cooking, hunting, the role of
the meat carver at the table and medieval kitchens. 

Green Beans...also known as Broad or Fava beans date back to....who
knows? Egyptains had them in their tombs..yes, they were on the medieval
table.

accurate of chronologicals, but it gives a good starting overview and
feel for what is from when.

History of Food by Maguelonne Toussaint-Samat translated by Anthea Bell
ISBN 0-631-17741-8.  Excellent wonderful book, and a great read.

You can't read just about medieval cooking without knowing modern
methods either....
Joy of Cooking is one of the most popular and best for the average cook
getting a handle on information of terms/tools/etc. of cooking-with
those cuts of beef here and there on the cow illustrated in the meat
section.
