Unfortunately, most cookbooks seem more concerned about health rather 
than historicity.  Tofu was first made in China around the second 
century BC by a man named Liu An.  You might want to track down a book 
called "Tofu Hyaku-Chin", or at least the information it contains.  It 
was published in 1782-- somewhat OOP, but still before any real Western 
impact on Japanese cuisine had hit.  Good luck with your search!
