my guess would be a chili creation ....

don't have the number, but there is (or was last time i was there) a
"exotic meats" dealer next to the harley shop in San Antonio (Alamo
Harley).  purchased ranched venison and bison from them in the past,
not sure about dillo or rattler.  and there's another well out 183
northways that i ride past now and again, but again no name ... 

have eaten both meats  ... of the two, i prefer rattler (good road
food when riding in the deserts ... easy to find, tasty, good protein
source.  never really cared much for dillo, has a odd after taste (to
my palette).  as for dillo transmitting leprosy ... it's passed by a
bacillus, so if well cooked should not  be a problem.
