Actually the person in charge of the kitchen should be a Certified Food
Service Manager and everyone in the kitchen should have a food handles card.
My Food Service Manager Card require successfully passing a two day course
and cost $75.00 for two years (the price went up first card was only $50.
for two years).  The food handlers card is $15.00 a year after a two hour
class.  That's what Darcy has.  In both cases if you renew before your card
expires, you are not require to retake the class.

This is one of those Sgt. Schultz areas.  If the local heath folks every had
a free weekend and decided to pay a visit to an event kitchen, could be
interesting.
