I'm not sure if this is limited to period mustard sauces
or not. But considering the purpose of our organisation, I
think having a lot of period mustards in this competition
would be a GOOD THING.

To help those who have no idea where they would find some
period recipes for mustards, there are these files in the
Florilegium:
Mustard-art (5K) 9/14/00 "Mustard" by Ld. Daniel le Vascon du Navarre
http://www.florilegium.org/files/FOOD-CONDIMENTS/Mustard-art.html
mustard-msg (88K) 9/30/01 Mustard seed in period. sauces. recipes.
http://www.florilegium.org/files/FOOD-CONDIMENTS/mustard-msg.html

Remember that mustards often need some time to age a bit, to
take some of the "edge" off. So, don't wait until the week
before the event to make your mustard.

I've been promising myself to make some period mustards for
quite some time. This is a nice incentive. Its just too bad
it is on the opposite end of the kingdom.
