Have you been working in various event kitchens recently? If not, I would
recommend doing this before trying to manage your own feast. If you
submit a bid and don't get chosen, I would still recommend doing this, as
not only do you gain experience, but other folks can get some idea of how
you handle things in the kitchen.
I highly recommend that folks interested in period cooking, whether for
feasts or just for their own enjoyment, consider joining one of the period
cooking mail lists. I have been on SCA-Cooks since it began back in 97 and
have learned a great deal about both period and modern cooking. You can
subscribe to the list using the mail list page on the Ansteorra server. Be
aware though, that it can be a high traffic list with three to five (or
more) digests per day.
You might also want to look through some of the files in the FEASTS or
other food sections on the Florilegium. I don't have a file specifically
on submitting a feast bid in Ansteorra, but there are similar ones. For
instance, here are a few that might help:
