[Ansteorra] Sleeping sitting up vs lying down

I'd be more inclined to think that the beds were shorter, as were bunks on ships, etc, because of the shortage of space. Putting bunks in places like bunkers, submarines, etc almost always necessitates shorter than 'average' bunks. It has nothing to do with the height, nutrition, or health of those using the bunks. Most people sleep in a curled position, or can learn to quite easily.
