Pedialyte is a good idea too... sometimes the adult electrolyte replacement drinks are too tough on a young one's stomach...
 
Also Go-gurt (yoghurt in a tube) is a good idea... easier than cheese on the stomach though a little high in sugar.

One thing I recommend, from experience in the past with my son, take plenty
of bottled water.  At that age, a change in water can be a recipe for
problems, from upset tummy to diahrrea.  If you have a cooler, I'd go with a
good supply of his favorite juices as well.  As mentioned before lots of
finger foods, fruits like apples and grapes, cheerios, and if I remember
correctly, gerber has a line of ready to eat toddler foods that don't have
to be kept cool or heated up.  If you're taking a cooler, another fun treat
for him is string cheese, he can tear it up while eating it, but get him a
variety if he likes different flavors.  Multiple sippy cups (or whatever
type cup he's using now) is always a good idea, that way he'll always have a
clean cup (or one to use while you're cleaning the other).  Letting him
snack all day and not worrying as much about scheduled meals is usually a
good idea because he's in an unusual situation and likely excited and a
little bit hyper.  Try to stick with his normal schedule as far as naptime,
bedtime, etc... You don't want it to be too different from the norm.
