As others have said, enough to pass a punch or drop test. If you make 
the hood out of the same fabric and number of layers as the doublet, 
you should be fine.

Four layers of Trigger cloth will do, although neither the local 
Hancock *nor* the local Joann's are carrying Trigger these days, but 
Joann's has a fabric called "Target" that looks to be pretty much the 
same stuff. (I bought some last week for my new doublet, and it 
passes the drop-test just fine.)

One layer of 4-ounce leather will do, but that will probably be hot, 
unless you attach it directly to the mask like this:

Or, various types of linen, as described elsewhere.
