Calcium chloride you can get a most homebrew shops or places that sell cheesemaking supplies.   In North Houston try Brew It Yourself in Spring. http://www.brew-it-yourself.com/

Sodium Alginate and Sodium Citrate might be harder to find.  Ya may just have to order it from online cooking/spice supplies.  Easy to find online.  As easy as Amazon.com.
