Speaking NOT as a royal but just as someone who has served several crowns:

There are several reasons why TRM and TRH may wear different coronets.  The
first and most practical reason is, some of the coronets are significantly
larger or smaller than others and can not be comfortably padded for the
person wearing them.  Either they are simply too small to be worn
comfortably, or they are so big, the padding can make it look like the
coronet is levitating around their head.

The second reason is, some of the coronets are considered more in line with
a specific time period or persona.  If the respective royals are wearing
different time periods, one coronet style may look awkward with that garb.

As to how many sets there are, I believe there are 3 sets in use.  The
first set are the ones considered 'early period'.  The sets for TRM have 4
points with Black Stars  under each point.  The next set are the 'fleur de
lis' sets; with the Kingdom motto around the base.  The third set are the
newest ones TRM's Jean Paul and Gilyan are most often seen wearing this
reign.

I'm sure other people with add much more knowledge as the conversation
