To be frank (in my case Erik), I stick to Renaissance because it is in that time period most of my recipes are from. AND are more pleasing to my palate. I know what a contradiction a German with a discerning palate. On a more serious note I have a question: I am looking for a period recipe for Ox tongue. Mine is modern (17c+). HELP.
