Powdered hide glue is period, and can be bought on the Web or from Woodcraft
on North May in OKC.

If you want to make your own, then there are several good Web pages
dealing with the "how-to". One such is at
<http://www.practicalprimitive.com/skillofthemonth/hideglue.html>.

Tree sap also is period. Pine sap and Canada balsam sap both are
horribly sticky, and I think they would work well. They can be thinned
with alcohol (use 91% or stronger), turpentine, toluene(*) or xylene(*).

* Toluene and xylene are toxic and probable carcinogens. You will want
   _GOOD_ ventilation.

Please let us on the list know what you choose, and how it works out.
