I have a really good handout from a King's College about cheesemaking 
including recipes on simple cheesemaking.  If I find it I will mail it to 
you.  I did a class on period cheese once (no notes but traces of 
memory.)  THere are still types of cheeses that we can trace back.  Gtetost 
is one of them.

Besides you know ----- sheep - cheese  there's a connection. (grin)

And I'd love the article on spindles.

Speaking of which --- do I owe anyone articles on anything?
