I think I recall Mistress Kaitlyn saying that when sewing wool together, she
preferred to use linen thread because it doesn't bind up/stick as much with
the fibers of the wool fabric (logical, given the characteristics of the two
fiber types).  If you are doing something from a specific period,  however,
I'd check the sewing techniques used at that time before making the
automatic decision to use linen over wool.  As Mahee mentioned, if you opt
for linen thread but just can't find it, use cotton and indicate why in your
documentation.  Clare's right - you'll probably end up getting some good
sources for linen thread that way.
