Lord Adolf told me once brewed a bear. He said it's a Germanic recipe he used. The recipe was said to be found by a woodsman under a toadstool in the Black Forest.

It won't be an A&S project unless you make your own ink, writing quill, parchment, and learn some calligraphy.
Then if your stories fill several pages you might want to get into book binding to house your work.
You'll also need to know a bit about leather working to make the book's cover.
If you want to make your own mark on the book you'll have to learn some metal casting to make your own stamp.

Some nice illustrations would certainly go a long way towards drawing attention to your works should they end up in a publication.
How about providing the barony with a copy of your map, on parchment of course, that depicts our coastal waters and the dangers you've encountered in your travels.
Some period navigational tools and their method of construction would be great A&S projects.
The simple block and tackle used forever on a ships rigging and taken for granted by all would also be a great A&S project. Not only could you show how they were made, you could, 
by example, show how the ancients figured out how to take advantage of basic leverage principles.
Let us not forget the problems of containment. The sailor utilized coopered barrels to contain their food stuffs. The barrels were hand crafted and had to be watertight.
How were they made? Where does a Captain purchase them? What kind of food and drink did they contain?
No sailor could sail without rope. How is it made? What's it made of? How much was needed for a good sized ship?

M'Lord Chrestien Brule, if you're contemplating an A&S project, and I think you should, you've been standing on a treasure trove of potential A&S projects every time you take the wheel of the Phoenix.
