I have had the same experiences. Quilting is period but seemes to me mostly done on solid pieces of fabric. Piecing also 
seems period but seems to be mostly done with the same fabric to extend it's shape or for an appilque type of application. 

However, I have heard of patchwork, Maybe Joseph's coat of many colors?  

But the link Amata posted looks glaringly like an early american patwork quilt, the geometric design is much like our traditional 
american quilts.

 I was surprised to see it mostly because I had not seen it. Not because it was something I would not have expected a medieval 
or reannaisance seamstress to do.
