According to Master Cynric, the collective is a "feast of brewers"--at least 
in the 15th Century:

Not bad, but I would have thought something more fitting like

a vat of brewers
a tankard of brewers
a wort of brewers
a fermentation of brewers
an effervescence of brewers

Also, he lists nothing at all for vintners, so we should provide our 
own--mayhaps

a bottling of vintners?
a crush of vintners?
a bouquet of vintners?
