I am not a chivalric fighter and so I may be the best person to answer this, but my response would be, they would simply choose. I have been playing for 17 years and I have never gotten to do everything that I wanted at any event to which I've gone. But when we started playing, heavy was on Saturday and light was on Sunday. That was just the way it was. As the rapier community grew, this was a problem. Before that, many people fought in both styles and therefore the split of days did not force a choice. People could choose to do both. As the event stewards were pressured to either often switch days (rapier saturday and chivalric sunday) or switch championships, the tradition became to do both in the same day and the simply switch which one had morning and which had afternoon. This in my opinion was the beginning of the shortening of events. People would show up early Sat morning and camp one night and leave by 10 on Sunday. Most of us are also older and need Sunday to rest up from Saturday so we can work on Monday. :)
I'm not making a suggestion. Just stating my observances of how things have changed over the years. As things change, so must we. We must now make choices.
