If you make a cold dish such as a macaroni/tortilleni dish, pack it in
gallon zip-locks so it is watertight and keep it in your cooler on ice, it
should be just fine. I've kept quiches this way and many of them are just
yummy served cold. Fruit salads and green salads are another way to go. How
about some of the desert dishes such as hummus and pita bread or tabouli?
Desserts such as cookies, pies and cakes could be done. You don't have to
make a main meat dish.
Think of this as an opportunity to make something more period. How did the
folks of the time period we are recreating keep from food poisoning
themselves?
If I remember correctly, there is this fellow who has this awesome website
called Stefan's Floregium where you might get some good ideas this way
(Sorry, Stefan! I couldn't resist!!!!!)
