It's up to you.  Different fabrics can behave very differently.  Linen,
wool, and silk all have a bit more stretch than cotton, and that amount can
change event depending on the weave.  If you are nervous about cutting into
that expensive fabric, by all means, bring some old sheets to do the mock up
with.  Just be aware, that there will be more fitting on the "real" think
later.
