I was looking for someone in Austin to do small quantity water jet type
cutting of steel 

And I came across these folks who also do tile...

Water cutting designs into metal then making armor, etc out of it.

 

(Imagine the faceplate of a helm cut in acanthus leaf patterns,
Heraldry(with crests),  etc... cool!)
