At Pioneer Farms they do food demos so that visitors can see and sometimes even help a little (churning the butter, etc.) how meals were prepared in pioneer days. But because of the licensing issue the food is not offered or sold to visitors - just consumed by PF staff and volunteers. That might be a reasonable work-around for the park demo, as well.

However, there are still many creative ways to show off food and
cooking
and that we do lots of it. Maybe find out what foods will be sold a
little ahead of time and do a short history of each showing if it would
have been found on the medieval table or not.
