I am using:
WLP550 Belgian Ale Yeast from White Labs.

Saisons, Belgian Ales, Belgian Reds, Belgian Browns, and White beers are just a few of the classic Belgian beer styles that can be created with this yeast strain. Phenolic and spicy flavors dominate the profile, with less fruitiness then WLP500.
Attenuation: 78-85%
Flocculation: Medium
Optimum Fermentation Temperature: 68-78°F
Alcohol Tolerance: Medium-High

The thick head of yeast at the top of your wheat beer
is normal for many yeasts.  I'm guessing you haven't
used this style of yeast before.  You can check the
yeast profile on the maker's web site to know what to
expect when you brew.  You're probably using one of
these:
