Our biggest local populace gathering is on Tuesday evenings, at
Patterson Park in Austin

If you can't wait that long, a smaller (but still well-attended)
archery practice is held on Sunday at Twin Lakes Park in Cedar Park
(same URL).

We've got about a dozen active guilds

half-dozen crafts for which there aren't guilds but related to which we
have semi-regular classes or group projects.
We have a small but active group of heraldry enthusiasts, and open
heraldic commentary meetings

We put on two large local events each year (October and February) and
one medium-sized one (December). A large multi-regional event is held
within the barony's bounds in May <http://lysts.swordworks.org/>, and
we help with that one. This year we're also hosting the Queen's
Championship (in July). So there are lots of opportunities to learn
about how events work and/or to master any particular aspect of event
planning or volunteering that you might find attractive, as well as to
show off your handiwork or simply enjoy yourself.
In addition to armored and rapier combat, we have an active archery
community, some very enthusiastic equestrians, and a siege engine crew
<http://groups.yahoo.com/group/bg-siege/>, as well as youth boffer
fighting.
Our fabulous Minister of Children (who happens to be my lord) organizes
some very interesting classes and projects for the young ones at all
our events, and is currently looking for a successor. He'd be happy to
teach you how to do what he does.
And, of course, we have this very active branch mailing list, through
which you can discuss just about any topic related to the S.C.A., find
people who share your interests and can teach you or are eager to learn
from you about them, and initiate any new activities you want badly
enough to do the work.
In short, if it happens in the S.C.A., odds are good that it happens,
used to happen, or could if someone wanted it to happen in Bryn Gwlad.
I don't think you'll have trouble finding things to do here.
