Well most likely it is being used to make the dish richer in flavor.
I have never cooked with marrow except in broths but you could
prolly fake it with crushed beef bullion cubes mixed with sweet cream butter
Sorta of depends on what you want to use it for and what you are making.
Thats just a guess on my part, I am more of a contemporary cook than
any sort of period one.
