My current plan for 12th Night feast is a rather simple meal:
1st Course
Manchet
Cheese
Beef Egredouce (vegetarian available)
2nd Course
Homemade Sausage
Chicken dish (not sure which yet)
Peas in broth
Mashed beans topped with carmalized onion
Spinach in butter/vinegar sauce
Sweet
Custards and tarts
This is good tasting, filling and period.
But would this be acceptable to diners for something as elegant
as 12th Night? Should I "fancy" it up some? Remember that kitchen
facilities are limited at the site so this will have to be pre-cooked
and warmed there.
Also, please remember that 12th Night is now Regional. It isn't just
Steppes and we would love to see folk from outside the barony
participate.
So..Keep It Simple, Stupid? Or provide the elegance as required of a
Grande Feast?
