Have you tried starting with the Hellenic ideals (as expressed in the Odyssey) and moving through to the middle ages?
I remember the opening ceremonies in Athens had that welcome the world like a good host thing going on.
Also the Russian churches still use the the welcome of bread and salt for visiting high ranking clergy which may trace back to the steppes.
A search on Medieval hospitality turned up a few interesting thoughts:

If you can find some of the presented papers these look promising for source material

Subject: [Elfsea] Assistance needed for grad paper
Good evening, all!
I am looking for information on hospitality/lack of hospitality in the Middle Ages (ca. "Sir Gawain & The Green Knight) from the perspective of the host. That is, what punishments or recourse would there have been if the guest violated the rules of hospitality? I've tried to Florilegium, but I'm needing a bit more information than what's on there.
Any help you all can give would be most appreciated. I am hoping to have this paper turned in by Monday at noon.
Thank you in advance!
Eleanor Cleavely
