Maybe?  It depends on exactly how much was there and what you wanted in the way
of sleeves.  I think so, but we'd have to sit down and pattern it out.

Once you cover the cotehardie (or bliaut) w/ a shorter tunic, it would look like
the typical (if very full) Norman tunic from the hips down.  It would be an SCA
version of the look, but I don't see any reason why you shouldn't do it that
way.  I'm a firm believer that wardrobes should be mix & match.

I don't know.  It would definitely add bulk, but I don't know if it would add
enough to appear bulky.  It could.

kirtle with jacket is not period.  Seriously, I don't know what would look the
best or make you happiest.  What do you really want to do?  In the long run, it
is more important that you be happy with, and willing to wear, your garb than
that it be perfectly period.
