Well... regarding kitchen.
Given the ambition of what you would like to accomplish, we need a trailer as opposed to a kitchen tent. This trailer would need to have a shuttered window installed on one side, a portable awning that could be attached - and two vents placed in ceiling to allow fumes to escape. A contractor outlet box screwed to the side and a collection of extension cords would round it out.
I can get a large industrial rotisserie for cheap (like $250 cheap) - it is similar in size to the one I used for Glaslyn Defender feast. Beyond that, an electric oven and stove -
Frankly, getting some like John to whip up a converter box for an appliance plug, we could grab a cheap GE electric stove / oven and a cheap refrigerator / freezer to bolt into the trailer. So, aside from the trailer, we could outfit it for operation for under $1000. Frankly, all things considered - if the time frame is set far enough out, I am willing to purchase and outfit the trailer myself and in turn donate my time and the trailer for use with the Legio Centurii
With the set up I described above, I can provide sustenance for up to 250 people on short notice.
With the trailer, we need not worry about having to set up the kitchen, its a matter of pulling up, anchoring the trailer, plugging in the utilities and stocking the fridge.

Gulf War and Gothic are already pretty much a given for me to attend. Not sure about BAM as it is back to back with Gothic...
As for the Camp Kitchen, you already know I am willing to direct that effort. What I would need aside from the kitchen itself is of course the occassional assistants to help start fires, watch pots, wash pots, etc. I will be happy to do all the cooking and even train a back up cook for those events you want the kitchen to operate and I will not be present.
If you like, I can send you a list of what I invision for a mobile kitchen -
