I Don't know if you have had a chance to look at the classes being offered at Kings College yet but there are some great ones.
 
Stephen you might be interested in: Introducing Fruit to Alcohol aka Making cordials. The teacher is Magdalena "Dena" Cortez and she makes some of the best cordials and she usually has some at Gulf War to people to taste.
 
Michelle there is a Viking Seam Treatments taught by Magge MacPherson. I don't think you will want to miss this class she does amazing work and research.
 
Timur there is - Tablet weaving - beyond the basics
 
Brandon, Suzanne Beraud, Kingdom Hospitaler is have a class on SCA Retention 
 
Alexandria, Medieval Calligraphy taught by Penelope de Bourbon, might interest you.
 
Everyone might be interested in Ansteorran Kingdom Insignia taught by Radegund of Tours.
 
Stephaine fiber arts will be well represented!!
