The only Words capitalized in an SCA blazon are
- "(Fieldless)" or "(Tinctureless)", which really aren't part of the
  blazon per se
- the first word of the blazon
- the tincture Or
- proper names

We tend to use "on <charge(s) A> ... <charge(s) B>" rather than
"<charge(s) A> charged with <charge(s) B>", unless "charged with"
simplifies the blazon.  So,

    Sable, on a chevron gules fimbriated argent three bezants.

The chevron should divide the field roughly equally.  Therefore, it
should either be made steeper (an earlier-period style) or the whole
shebang should be moved up (flatter chevrons were later).  While
normally that chevron would be considered fat, the fact that there's
charges on the chevron and not on the field should indeed make it
fatter.  Fimbriation should go along the entire edge that's on the
field, so that little notch at the tippy top of the chevron needs to
be filled in.

It's great early-period style -- hence, fine style for any time
(because it then looks like ancient arms, showing that you're of an
old and well-established family.  Old Money, er, Old Power was a
really positive point in their eyes.).  Huzzah for you!

I see no conflicts, but others ought to check.  Most chevroned armory
has a chevron between, a chevron and in chief, or a chevron and in
base, so it's easier to check than one might assume.
