Setting aside the dance and archery alternative lifestyle suggestions...
The knowledge you seek is best gained by interacting with the other heralds
at events, helping them do those things, sitting around campfires and
exchanging "well at my first court, we processed and recessed uphill
through two feet of snow" stories, and generally by trying to do your job well.
A series of more specific questions than this one will likely get you
better answers though it should be noted that everyone who replied about
alternatives is, or has been, a herald; one is a kingdom deputy herald, one
is the outgoing Laurel King of Arms, and one chose to absorb so much
heraldic knowledge before being on the Laurel staff that he is practically
radioactive with it.
A practical item to answer your questions is called the "Book of the
Herald." If you can find an old copy, it is a good read. The college has
been trying to update since just after the last Ansteorran Ice Age and I
have some hopes that an edition will be complete before I leave office as
Star, maybe even a draft this year for comment. The Book of the Herald is
collection of articles written by heralds on the how and why of various
heraldic topics. Short of this, visiting is probably best along with some
focused specific questions in this forum.

PS - Speaking of radioactive heralds... Could we register "Quarterly sable
and Or, an escutcheon vert enflamed gules." as a badge for Daniel?
