There are some really good links from the main sca heraldry page.  The
Heraldic Primer had some great illustrations of how devices are "layered."

It would be a good place to start.

Also, to emphasize the pure visibility issue of it all, you can go armed
with card board, construction paper, scissors and glue and let them make
some devices and then stand far apart and see who can tell who is who.

Kids get a kick out of making things and generally remember more from it.
