When in doubt, I generally do a scan of the OP for the Sable Thistle categories that have been
used in the past, when turning in my award recommendations.  Course, that does not account for
categories that may have been used incorrectly historically. <grin>  

Whenever I've been Sable Scroll, the category was 'Bardcraft' or 'Bardic Arts' which covers most
bardic activities; tho some Crown's want to be more specific. I recently filled in a thistle for
'singing'; even though the lady also wrote the songs she sang.  We suggested 'Bardcraft' to the
Crown, but they specifically wanted 'singing', so that's what they got.  

The Sable Talon has a specific list of categories for the award (see Ansteorran Award Texts), but
I don't believe the Sable Thistle ever has, so it's up to tradition and the Crown choice. 
Depending on the 'art' it can even be a marshalling category, such as: Equestrian Arts, Historical
Swordplay, Seige Engines, Crafting of and Skills in Thrown Weapons, Archery, Period Rapier Combat.
