Given the personas of Their Highness, couped may be a little historically appropriate.  Check out the couped label in the Edward IV Roll at http://www.leavesofgold.org/gallery/literary/literary16big.html
I can't read the text, but I believe that's the Arms for the Prince of Wales "Quarterly France and England, a label ermine."

Red, couped and dovetailed is what I've seen, too. I don't think there is a significance to any of those options past aesthetics and the Rule of Tinctures, if that.

It has been red & dovetailed.  That is what is shown on the website and I
believe that is what they have on the Prince's fighting tabard.
I know that red is used (maybe balancing the demi-Sun), but the dove-tailed
vs. embattled may change.
