I would have blazoned this cock's posture as "passant, wings addorsed". I thought 'rising' would imply the legs were raised and tucked in against the belly or breast, and possibly the head would be pointed in the direction of flight (bendwise).

Quick stylistic note: That bird has very small wings, compared to both birds of the same type and other birds in the same posture in period emblazons. (They're pretty small for a real chicken, too, but that's less important here.) Consider the examples I've attached. 
 

  
  
  
 
I doubt it'd get the submission returned, but it does make the device look less like the real thing. 
 
By the way, if the desire is a cant on "Lovecock", you might mention that something like "Or semy of hearts gules, a cock rising gules," would look more like period arms, and would convey the concept of chicken love at least as effectively.
