That is partly because a mitre is a prohibited charge.  Per PicDic, "Of
religious headgear, the "mitre" is found as a charge in the arms of
bishops and bishoprics; its use is thus not permitted in the SCA."

Unless you can demonstrate a period usage of the mitre in armory that is
not directly related to a bishop, it is disallowed as a claim to rank.
