Hm.. you may want to take a look at _Magic Gardens_, by Rosetta
Clarkson, and _Green Enchantment_ by the same author (also known as _The
golden age of herbs and herbalists_). They have some excellent
illustrations and information about medieval and early Renaissance
gardening.
