HERB - "Violets are blue....."

Greetings!

What you are seeing is the woods violet (Latin specification slips my
mind here); we don't have naturally-occurring sweet violets this side of
the big pond.  On the other hand, although woods violets may not have all
the health benefits of their European cousins, the flowers are edible.  I
have made candied violets, violet jelly, and violet syrup out of them,
and used fresh flowers on my salads.  

If you're curious, look for sone of the lesser-known varieties that
occur...yellow standing violets, white violets, white-and-purple violets,
and PINK-and-white violets.  They're lovely! 

Hmmm....violet tea...gotta get busy in the backyard....
